- Soak rajma,boil,Strain water and spread in a Plate.Soak rice for 2 hours.chop garlic.chop tomato.Heat 1 tbsp ghee in a heavy bottomed nonstick vessel on Medium flame.Add garlic,black peppers and half the quantity of onion,saute on low flame till onion is soft.



- Now add rice and saute for 2_3 minutes.Keep ready 2 cups of hot water.Add the hot water to rice and let it cook.(quantity of water depends on quality of rice).when cooked, add salt,red chilli powder, vinegar and Rajma.Mix well with light hand.Off the gas.rice is cooked.



- In a pan heat 1 tbsp ghee,saute remaining onion,grated carrot,capsicum for 2 minutes.Add chilli sauce, soya sauce and salt to taste.Mix well.



- Add cooked rice to this mixture and mix well everyrhing.Mexican Rice is ready to serve.Transfer in a serving dish,garnish with chopped tomatoes and serve hot.
