  1. 200 g boiled rice
  2. 4 eggs
  3. 1 capsicum
  4. 1 tomato
  5. 1 onion
  6. 1 tsp mustard seeds
  7. 1/2 tsp cumin seeds
  8. 1/2 tsp Fennel seeds
  9. 1 pinch hing
  10. as required Curry leaves & coriander leaves
  11. 1 pinch turmeric powder
  12. 1 tsp ginger garlic paste
  13. 1 tsp Garam masala powder
  14. 1/2 tsp Kashmiri chilli powder
  15. 1/2 tsp red chilli powder
  16. 1/2 tsp cumin powder
  17. 1/2 tsp pepper powder

  1. Heat oil in a kadai. Add mustard seeds cumin seeds fennel seeds and hing. Once it splutters add onions and curry leaves. Saute until onions turn transparent. Next add ginger garlic paste. Fry till the raw smell goes off. Add tomatoes & salt. Saute till tomatoes becomes mushy.
  2. Add capsicum. Stir for 3 minutes on high flame. Add turmeric powder, red chilli powder, Kashmiri chilli powder, cumin powder, garam masala powder, coriander powder and salt as required. Mix them well. Add a splash of water. Cover & cook for 5 minutes. Then add oil. Break open the eggs one by one. Add salt, pepper powder to the eggs. Leave for 2 minutes without disturbing. Then scramble them slowly with the spices. While the eggs are half done, add the boiled rice, coriander leaves.
  3. Toss well on medium- high flame for 3 minutes till the spices are mixed together with the rice. Egg rice is done!! Serve hot ☺
