- 2-3 tbsp ghee,

- Slice medium all veggies and assemble all ingredients

- Soak rice for 1 hour and then cook rice and keep aside.

- Boil soya nuggets with little salt, squeeze water from nuggets and marinade for 30 - 40 minutes in curd by adding salt, cumin powder, haldi powder, red chilli powder and garam masala.
- In pan add little ghee and roast cashews raisins for few seconds and keep aside.
- In same pan add ghee, wait for medium heat, then add all whole spices, sauté for 1-2 minute.
Then add all veggies along with slit or chopped green chilli and ginger. - Stir fry under medium flame till the veggies get soft, then add the marinated soya nuggets + salt and then sauté for 2-3 minutes till water from curd evaporates.

- Then add cooked rice, mix gently, add required salt, sugar, garam masala and give a nice mix. Stir fry for 3-4 minutes and lastly add cashews + little ghee + raisins and mix gently and keep under cover 2-3 minutes under low flame.

- Soya Nuggets fried rice is ready to serve.
I served with Cholar Dal / Bengal Gram Dal, tomato n Olive Chutney and plain curd.
